Chilean Sea Bass with White Wine & Tomato Sauce

Ingredients for White Wine & Tomato Sauce:

  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes
  • 5 large cloves garlic, finely chopped
  • 16 oz tomatoes, cut in squares
  • 1/4 cup dry white wine
  • 1/2 cup fresh basil, finely chopped
  • 2 tbsp fresh lemon juice
  • 1/2 tsp fresh lemon zest
  • 1 tsp granulated sugar 
  • salt to taste
  • pepper to taste

Heat oil in a large sauté pan over medium heat. Add red pepper flakes and garlic and cook for 1 min. Add tomatoes and cook (stirring occasionally) until they start looking soft, but still hold their shape, about 10 min. Add white wine, stir, and allow it to gently simmer. Add the basil, lemon juice, lemon zest, salt, sugar, and pepper and cook for 2 mins. Transfer the sauce into a bowl and set aside.

 

SEA2DOOR Chilean Sea Bass Fillets

Heat 1 tbsp of Coconut oil or Grape seed oil ( we love these 2 alternatives for our fish) in a large sauté pan over medium heat. First, pat your SEA2DOOR Chilean Sea Bass fillets dry with paper towels. Then, season both sides with salt and pepper.

Place SEA2DOOR Chilean Sea Bass in hot pan and cook until golden brown, about 3 minutes each side or until it's cooked through.  (TIP: The best way to tell if your fish is done is by testing it with a fork at an angle, at the thickest point, and twist gently. The fish will flake easily when it's done and it will lose its translucent or raw appearance)

Now, pour the sauce over the fillets, let the sauce warm up for a minute, and serve.
